Maltoferm® Malt Extracts are a versatile line of natural sweeteners and functional ingredients developed by Briess, the only North American malting company producing malt extracts from its own malted barley. These extracts are crafted to deliver a wide range of flavor, color, and performance benefits across food and beverage applications, while supporting clean-label initiatives. Made from 100% pure malted barley—or in some cases, a blend with corn—Maltoferm® extracts are available in both liquid and powder forms, and in conventional and organic varieties. They are ideal for enhancing sweetness, improving browning, adjusting color, and contributing body and viscosity in baked goods, snacks, cereals, sauces, and more. The Maltoferm® line includes: Maltoferm® 10000 (liquid): A sweet, malty extract with amber to brown color, offering 60% the sweetness of sucrose. Maltoferm® 10000 Very Dark: A rich, dark brown version for deeper color and flavor. Maltoferm® 10001 (powder): A dry version with 65% sweetness, ideal for dry mix applications. Maltoferm® A-6000 (liquid) and A-6001 (powder): Designed for natural color adjustment with little to no flavor impact at low usage rates. Maltoferm® CR-45: A reddish-brown extract with moderate sweetness and a robust malt profile. Maltoferm® Ultra Sweet Powder: A blend of corn and malted barley, offering a sweet, malty flavor at 65% the sweetness of sucrose.
