Edicol® DPG Series – Food Grade Guar Gums Edicol® Food Guar Gums are white - cream coloured powders, extracted from the endosperm of Guar seeds, “Cyamopsis Tetragonalobus”. They are hot and cold water soluble Galactomannan Polysaccharides having Beta 1,4 linear mannose backbone chain with a single galactose side unit on approximately every alternate mannose unit in an alpha 1,6 linkage. They exhibit high viscosities at low concentrations and non-Newtonian, pseudo- plastic rheology. Viscosities increase exponentially with increasing concentrations. Edicol® DPG Series is a new range of Food Grade Guar Gums with Ultra Low Viscosities which open up new applications for Guar Gum in the Food and Beverage sector. The 4 DPG Series products classify as E-412 and meet FDA and GRAS requirements. The depolymerisation is achieved by thermal, mechanical and alkaline oxidation techniques. The estimated Molecular weight is 75,000 ~ 500,000 Daltons (Normal Guar = 2 ~ 8 million Daltons). Edicol® DPG Series products have possible applications in: ● Food / beverage systems requiring low viscosity with high solids ● “Long flow” rheology in liquid systems achieved by high solids, low viscosity ● Texture modification without the associated “gummy” mouth feel ● Syneresis control ● Possible replacement / reduction of sugars and other solids in beverages ● Improver / additive in Gluten free Bakery products ● Improved “scoopability” on frozen products even at very low temperatures ● Add body, partial replacement of other solids ● Higher fibre addition and possible fibre claim in foods ● Unique blends with other hydrocolloids to achieve synergy for texture modification. Edicol® DPG products are available in 4 versions from DPG-1 to DPG-4 with varying viscosities of 1,000 cps at 4%, 6%, 8% and 10% concentrations in water.
